Offset earns its keep the other way round. The plates are paid for before the first sheet, then the per-sheet cost keeps falling as the run grows, until somewhere in the middle it passes digital. Where that crossover sits depends on the piece, so it is worth pricing both.

Folding is the part that goes wrong quietly. Heavy cover stock cracks along a fold unless it is scored first — a score crushes the fibers in a line so the sheet folds instead of splitting. Folded cards and invitations get scored, then folded.
